About:Ā Hacienda Colima has been in the Castro-Kahle family since the 1840s and is today managed byĀ AlejoĀ Kahle Castro, a fifth-generation producer.Ā AlejoĀ is a master of his craft and has placed multiple timesĀ in the Costa Rican Cup of Excellence.Ā Hacienda Colima sits high on the slopes of theĀ BarvaĀ Volcano in the Central Valley of Costa Rica, an area famous for producing incredible coffee.Ā The Hacienda primarily grows sugarĀ cane,Ā but this continues to shift as demand for its coffeeĀ grows. Conservation is important to the Castro-Kahle family, and they have acquired 1500 hectares of rainforest for ecological preservation in the areas where they grow their coffee. This lot was processed using a traditional natural method where whole cherries are sun-dried on patios. This has created a coffee with red berry and tropical fruit notes.Ā
